Salad Dressing

1/2 shallot

1/4 olive oil

1/4 red wine vinegar

1 tablespoon Dijon mustard

1/2 teaspoon salt

1/2 teaspoon pepper

Salad

1 Avocados

1 Tomatoes

1 Can Chickpeas

2 Hard boiled eggs

Spinach

1 Romaine lettuce

Parsley

Blue Cheese


Instructions

Salad Dressing Instructions:

Make the salad dressing by combining all salad dressing ingredients in a food processor. Pour evenly into the bottoms of the mason jars.

Salad Instructions:

Wash and cut the salad veggies and layer the ingredients into the mason jar in the following order…

  1. Avocados
  2. Tomatoes
  3. Chickpeas
  4. Hard boiled eggs
  5. Spinach
  6. Romaine lettuce
  7. Parsley

When ready to eat pour into a bowl and add blue cheese to the top.
