8 oz Havarti cheese

8 oz Gouda cheese

Instructions
Prepare the vegetables:
- Wash and cut the red bell pepper, eggplant, squash, zucchini, and red onion into thin slices.
- Place the vegetables on a sheet pan, and sprinkle with salt and pepper.
- Spray with olive oil
- Bake at 400 degrees for 10 – 12 minutes.
Prepare the cheese:
- Cut the havarti and gouda cheese into thin slices
Butter the bread:
- Spread a thin layer of butter or margarine on the outer side of each slice of bread. This will help achieve a golden and crispy crust when grilled.
Grill the sandwich:
- Heat a skillet or griddle over medium heat.
- Lay out the two slices of bread with the buttered side down into the pan.
- Evenly distribute the havarti cheese.
- Layer the sliced red bell pepper, eggplant, squash, zucchini, and red onion on top of the cheese.
- Evenly distribute the gouda cheese on top of the vegetables.
- Place the slices of bread buttered side up on top of the cheese-covered slices to create the sandwiches.
- Cook for 3-4 minutes on each side or until the bread is golden brown, and the cheese is melted.
Serve:
- Once both sides are grilled to your liking, remove the sandwiches from the heat.
- Let them cool for a minute before slicing.
- Serve hot and enjoy your delicious veggie grilled cheese sandwich!
